	Who Absente Absinthe is produced by Distilleries et Domaines de Provence, a historic distillery founded in 1898. The brand is part of a portfolio managed by Crillon Importers Ltd., which was established by the legendary spirits marketer Michel Roux (famous for launching Absolut Vodka and Bombay Sapphire).

	What Absente is a bold, bittersweet, and highly aromatic spirit dominated by a cooling black licorice flavor. Because it is bottled at 110 proof (55% ABV), it has a significant alcoholic "bite" if sipped neat, which is why it is almost always diluted. When you add ice-cold water to Absente, the clear green liquid becomes milky and opaque. This is called the "louche" effect. It changes the texture from oily and sharp to creamy and soft, while releasing the hidden floral aromas of the botanicals.
	Why While the "ritual" with a slotted spoon and sugar cube is classic, Absente is a favorite for rinsing a glass in a Sazerac or adding a "spike" of herbal flavor to a Death in the Afternoon (absinthe and champagne).
