Amargo Vallet is produced by Vallet Hermanos (also known as Royal Vallet) in Mexico. The spirit's history dates back to the 1860s when its creator, Henri Vallet, emigrated from France to Mexico. He established himself as a prominent distiller in Mexico City, and by the 1880s, his original recipes for amari like Amargo Vallet and Fernet-Vallet were well-established.

Amargo Vallet is an intensely bitter, Mexican amaro designed in the 19th-century European digestive style. It is notable for being one of the few spirits to use Angostura bark as its primary bittering agent, rather than the gentian-heavy profile typical of many Italian amari. The spirit is characterized by its unapologetic intensity and wood-focused profile.  Experience deep scents of cinnamon, clove, and cola, with an underlying note of dark red fruit. The taste is earthy and full-flavored, featuring bittersweet dark chocolate, rhubarb, and black cherry. It has a firm, lingering bitterness from the tree bark. The finish is long and dry, with prominent notes of wood tannin and spice.

Because of its intense profile and heavy notes of cinnamon, clove, and dark chocolate, Amargo Vallet is best used in drinks that can stand up to its "potent bitter wallop". Good drinks to try include The Mexican Cola, Friar Tuck and The Night Train. Opt for simple mixers—it is remarkably effective when simply added to Coca-Cola, spicy ginger beer, or served over ice with a splash of soda to let its "dried Silk Road spices" shine.
