What The Bixhidú Espadín Artesanal is a "clean" and vibrant mezcal. While many Espadíns can be heavy on smoke, this one focuses more on the sweet, roasted heart of the agave. It opens with a bright, crisp scent of citrus peel and fresh-cut grass. You'll also pick up a distinct green vegetal note, almost like bell pepper or roasted jalapeño. he flavor is surprisingly sweet for a mezcal. It leads with cooked agave (which tastes like roasted honey or sweet potato) and moves into tropical notes of lemon and pineapple. It has a smooth, slightly spicy finish with hints of cinnamon and black pepper. Because it is often aged in glass before bottling, the "heat" of the alcohol is mellowed out, leaving a silky mouthfeel. The smokiness is very restrained. It’s more like a light wood-fire scent in the distance rather than a heavy, ashy flavor, making it very approachable for people who are new to mezcal. |

Why While most mezcals are bottled immediately, Bixhidú often uses a process called Madurado en Vidrio (matured in glass). By letting the spirit rest in large glass jugs for up to two years, the harsh alcohol bite softens and the flavors integrate, all without the wood or vanilla flavors you’d get from an oak barrel. |
