What Caballito Cerrero Azul Blanco is widely celebrated for its intense, deeply complex, and savory flavor profile. Because it is bottled without additives and typically at a higher proof (often 46% ABV), it delivers a much richer punch than a standard unaged tequila. The aroma is a heavy baseline of caramelized, sweet roasted agave, with savory and herbal notes of olive brine, cut grass dill and herbs. The texture is very oily, thick, with a viscous mouthfeel that heavily coats the tongue. Upfront the flavor is an explosion of sweet agave balanced heavily by sharp, green vegetal flavors like jalapeño/shishito peppers, anise, and celery. It has a dry, sharp finish defined by wet slate, rain-soaked soil (petrichor), and sea salt. |

Why The family distillery, Santa Rita Fabrica, was built in 1873, but the site itself contains archaeological remains of agave distillation dating back to the 1500s. The family line spans 15 generations of tequileros. Drinking this bottle is as close as you can get to tasting what tequila tasted like in the 19th century. |
