	What Castle & Key Restoration Rye Batch 2 is a bright, young whiskey that leans more into sweet, herbal, and floral notes than the heavy oak or intense spice found in older ryes. On the nose youʻll find bright lemon peel, honey, and wildflowers with a base of graham cracker and toasted oak. A sweet entry of pie crust and honeysuckle is followed by stone fruit and mint. The finish is a distinctive, cooling spearmint sensation that leaves a light numbing feeling on the palate.
	Why The distillery sits on a massive underground limestone spring. Colonel Taylor built a key-shaped spring house over it to protect the water source. Every drop of Restoration Rye is made using this historic, mineral-rich water, which is a big reason for the whiskey's bright, crisp mouthfeel.
