What The Comandon 1992 Borderies Dry Cellar (Cask #151) is highly structured, deeply savory, and incredibly textured. Because a dry cellar causes water to evaporate faster than alcohol, this bottle has deeper wood interaction and a punchier profile than its wet cellar counterpart. The nose is a heady, savory, and aromatic mixture. You will pick up distinct notes of dried tobacco leaf, eucalyptus, fresh spring blossoms, mulled apple cider, and warm, flaky pie crust. The palate is deeply textured and hedonistic. It layers rich rounded vanilla, sherry, and sweet butterscotch with the fruity freshness of apricots and white flowers. The structure relies on delicate oak tannins that give it a very supple mouthfeel, filled with baking spices (spice box) and aromatic cedar. The finish is very long, cool, and pleasing. It elegantly walks the line between a forest of savory wood notes and a garden of bright, lingering fruits. |
