What Because Empirical Ehime is a single-cask series, the flavor evolves with each release, but the "DNA" of the spirit is consistently savory, floral, and deeply complex. It is built on a base of koji-fermented barley and pilsner malt, giving it a profile that sits somewhere between a high-end sake, a floral scotch, and a dry white wine. t opens with a punch of vibrant citrus (like yuzu or Meyer lemon) and a distinct floral honey sweetness. Because of the koji fermentation, there is an underlying "umami" scent similar to fresh sourdough or toasted grain. The texture is oily and rich. You’ll find layers of butterscotch, toasted nuts, and apricot. Unlike traditional whiskey, it has a "green" or "rooty" quality—think of the earthy sweetness of a parsnip or fresh licorice root. |

Why Unlike most Western spirits made with yeast, Ehime uses Koji (Aspergillus oryzae)—the mold used to make sake and soy sauce—to ferment a base of pilsner malt and pearl barley. This gives the spirit a deep, savory umami backbone that you won't find in whiskey or brandy. |
