What Fernet Vallet is recognized for its bold bitterness and robust, woodsy spice profile. In contrast to classic Italian fernets such as Fernet-Branca, it is much less minty and offers a drier, earthier taste. Its aroma is deeply roasted, highlighted by bold notes of cardamom, cinnamon, and dark clove, with occasional hints of dark fruits such as prune. The palate is intensely bitter and centered on woody flavors, showcasing pronounced gentian root and Quassia wood, balanced by warm baking spices and a subtle earthy, "dusty" nuance. The finish is long, herbal, and distinctly dry, with a lingering coolness of cardamom that follows the initial bitterness. |
