	What Il Gusto di Amalfi Finocchietto is a pure, intense expression of wild fennel. Because it is made from hand-harvested seeds rather than artificial flavorings, it has a "garden-fresh" profile that is both savory and sweet. If you enjoy the taste of fennel bulbs or the "anise" flavor of Italian sausage, you will recognize this immediately. It is less "candy-like" than black licorice and more like a fresh herb. Beneath the fennel, there are subtle notes of lemon zest and dried hay. Because the wild fennel grows on the cliffs of the Amalfi Coast, there is a faint, stony minerality to the spirit.
	Why Since Il Gusto di Amalfi Finocchietto is essentially "liquid wild fennel," it works beautifully as a savory, aromatic modifier. While it’s traditionally sipped neat after dinner, the most refreshing way to drink it is the Amalfi Collins.
