Who Koval Distillery makes the Single Barrel Bourbon It is fully mashed, distilled, aged, and bottled at their certified organic facility. Founded in 2008 by husband-and-wife duo Robert and Sonat Birnecker, Koval was the very first legal distillery to open within Chicago city limits since the mid-1800s. |

What Koval Single Barrel Bourbon tastes like creamy vanilla, bright apricot, and toasted nuts with a clean, slightly sweet pepper finish. Because it replaces the usual rye or wheat with millet grain, it completely avoids any harsh, earthy burn, offering a highly unique, pastry-like flavor profile. It opens with a remarkably sweet and inviting bouquet. You will instantly smell vanilla bean, bright orange zest, and dried apricots, layered over a comforting aroma of warm caramel and fresh wood shavings. It features a smooth, round, and slightly creamy mouthfeel. The initial flavor hits with a wave of honey, milk chocolate, and sweet corn. Mid-sip, the unique millet grain takes center stage, mimicking the taste of toasted almond, puffed rice cereal, and a hint of clove spice. The exit is crisp, gentle, and moderately long. It leaves a clean, warming echo of charred oak, bright citrus, and a soft ginger snap spice without any heavy, tongue-drying alcoholic heat. |

Why Founder Robert Birnecker grew up in Austria, learning the meticulous art of distilling delicate fruit brandies from his grandfather. He brought that exact same European mindset to Chicago. Koval uses a custom-made German copper still to isolate only the absolute "heart" of the distillation run, discarding the harsh, chemical-tasting heads and tails. This hyper-precise chemical separation is the secret behind why a young craft bourbon can taste so incredibly smooth, clean, and bright. |
