Who Koval Distillery makes the Single Barrel Rye. It is fully mashed, distilled, aged, and bottled at their certified organic facility. Founded in 2008 by husband-and-wife duo Robert and Sonat Birnecker, Koval was the very first legal distillery to open within Chicago city limits since the mid-1800s. |

What Koval Single Barrel Rye tastes like sweet gingerbread, warm baking spices, and crisp orchard fruit with a dry, minty finish. Because it is a 100% rye whiskey bottled at a smooth 80 proof (40% ABV), it delivers plenty of flavor without the heavy alcohol burn or aggressive "char" found in higher-proof ryes. It offers a uniquely bright, fragrant opening. You will smell a mixture of fresh green apples, pear, and honey, layered over warm aromas of vanilla, nutmeg, and jasmine floral notes. It features a silky, medium-bodied mouthfeel. The initial sip reveals a "spice cake" sweetness, bringing forward flavors of gingerbread, maple, and chocolate sauce. Mid-sip, it evolves with notes of toasted almond, coconut, and a touch of sweet candy corn. The exit is crisp, lively, and gently drying. It leaves a lingering trail of classic rye spices—like cinnamon and black pepper—cleanly balanced by a refreshing hint of mint and herbal tea. |

Why Most American ryes use the legal minimum of 51% rye and pack the rest of the bottle with corn and malted barley to smooth it out. Koval uses 100% organic rye grain. They don't use barley to kickstart the fermentation enzymes, choosing instead to let the rye speak entirely for itself. It is a rare, completely unadulterated look at what pure rye actually tastes like when it isn't masked by corn sweetness. |
