Las Marias Mezcal Salmiana is produced by Destilados del Centro, a third-generation, female-run distillery. The brand was founded by Emma (the granddaughter of founder Don Bernardo Diaz de León) and her husband Juan, who also serves as the maestro mezcalero for the brand.

Las Marias Mezcal Salmiana is famously non-smoky. Because the agave is steam-cooked in above-ground ovens rather than roasted in a pit, it tastes more like a sophisticated, savory gin than a typical Oaxacan mezcal. It is incredibly fresh and green. You’ll smell bell peppers, jalapeño skin (without the heat), and bright lime zest. There’s also a unique floral scent, like wet grass or desert flowers after a rain. It  has a very light and crisp body. The flavor is a mix of savory herbs (mint and tarragon) and a distinct salty minerality. You’ll also notice a subtle fruity sweetness that tastes like green apple or unripe pear. Like many Salmiana mezcals, it has a slight lactic or cheesy funk—think of a mild parmesan or sourdough—which gives it a creamy complexity despite being so light. The finish is cean and peppery. It leaves a refreshing, vegetal aftertaste that is very "crisp" compared to the heavy, ash-laden finish of other mezcals.

Most people associate mezcal with a campfire-like smokiness. Because Las Marias uses above-ground steam ovens (instead of underground fire pits), there is almost zero smoke. It’s the ultimate subtle mezcal—it tastes more like a wild, savory gin or a crisp white wine than a typical spirit.
