What Derrumbes Michoacán is a wilder and more tropical mezcal than the Oaxacan version. Because of the specific agave species used (Chino and Alto), it has a vibrant, funky fruitiness that sets it apart. It is incredibly fragrant. You’ll get a mix of sweet pine needles, tarragon, and a distinct tropical fruit punch scent. There is also a slight cheesy or yeasty funk from the underground fermentation that adds a unique depth. It feels rich and full-bodied. The flavor is a balance of roasted agave sweetness and bright, acidic fruits—think ripe peach, lime juice, and passionfruit. Because it is distilled in a Philippine-style still made of wood staves, it has a subtle, savory woodiness that isn't from a barrel, but from the actual distillation process.
