	What Mezcal Derrumbes San Luis Potosí is famous for its unique "Jalapeño Popper" flavor profile. The most distinct characteristic is a lactic, creamy funk often described as cotija cheese, goat cheese, or even a parmesan rind. It is highly vegetal, led by raw green peppers, jalapeños, and cooked asparagus. Underneath the savory notes are hints of honey, lemon zest, and tropical fruits like mango or overripe cantaloupe. It has a chalky, stony minerality on the palate with a clean, peppery finish that can include a touch of toffee sweetness.
	Why Unlike most smoky mezcals, the agave is roasted in above-ground masonry ovens (hornos), resulting in a spirit with little to no smoke character.
