On the palate, the inclusion of oats and rye creates a velvety, unctuous mouthfeel bursting with notes of dark chocolate, toasted walnuts, and warm baking spices, all balanced by a sharp hint of herbal rye. Why The historic recipe was discovered when cocktail historian David Wondrich unburied an 1865 Irish distillation manual while scouring the microfiche archives of the British Library. Seeking to reconstruct the lost flavor profile of mid-19th-century Irish pot still whiskey, Wondrich shared the obscure grain proportions—which included unmalted barley, rye, and oats—with master distiller Tad Seestedt of Ransom Spirits. Seestedt then meticulously recreated the mash bill using locally grown Oregon grains and traditional direct-fired copper alembic stills, bringing a forgotten era of whiskey back to life. |
