What Siembra Metl Quiote Jorge Perez Lot 2 is an incredibly vibrant spirit. Because it is distilled with fresh lemongrass, it tastes more like a high-end botanical infusion than a typical smoky mezcal. It is famously loud on the nose. You’ll get an immediate explosion of bright citrus zest, fresh green grass, and floral lavender. There’s a sweet, tropical undertone that smells like a basket of overripe fruit (guava and pineapple). I has a thick, oily texture that coats your tongue. The flavor is dominated by lemongrass and lime leaf, but it’s backed by a savory, earthy sweetness from the Maguey Alto agave. You might also notice hints of dark chocolate and sea salt. It ends with a long, dry, and fizzy minerality. It has an almost effervescent quality on the finish that keeps it feeling light and refreshing despite its high proof. |

Why In the Mezcal world, cutting the quiote (the flowering stalk) before it blooms is a standard way to keep sugars in the agave heart. But Jorge Perez does something radical: he harvests the stalks themselves. The quiote contains a different kind of concentrated sugar than the heart, giving this spirit an charged, candy-like sweetness you won't find in any other mezcal. |
