	What Siembra Metl Quiote Jorge Perez Lot 2 is an incredibly vibrant spirit. Because it is distilled with fresh lemongrass, it tastes more like a high-end botanical infusion than a typical smoky mezcal. It is famously loud on the nose. You’ll get an immediate explosion of bright citrus zest, fresh green grass, and floral lavender. There’s a sweet, tropical undertone that smells like a basket of overripe fruit (guava and pineapple). I has a thick, oily texture that coats your tongue. The flavor is dominated by lemongrass and lime leaf, but it’s backed by a savory, earthy sweetness from the Maguey Alto agave. You might also notice hints of dark chocolate and sea salt. It ends with a long, dry, and fizzy minerality. It has an almost effervescent quality on the finish that keeps it feeling light and refreshing despite its high proof.
	Why In the Mezcal world, cutting the quiote (the flowering stalk) before it blooms is a standard way to keep sugars in the agave heart. But Jorge Perez does something radical: he harvests the stalks themselves. The quiote contains a different kind of concentrated sugar than the heart, giving this spirit an charged, candy-like sweetness you won't find in any other mezcal.
