What Sotol Por Siempre tastes distinctly "green" and earthy, offering a profile that is often described as a bridge between the floral notes of gin and the smokiness of mezcal. The nose is bright and herbal. You’ll notice white flowers, citrus peel, and a strong scent of wet earth or rain on dry pavement (petrichor). There are also hints of pine sap and fresh-cut grass. On the palate, it starts with a subtle honey-like sweetness that quickly moves into savory territory. It features notes of black pepper, dried herbs, and a unique vegetal funk. Because it is wild-harvested from the desert, it has a distinct "mountain" minerality. The finish is clean and dry with a lingering peppery spice and just a whisper of wood smoke from the pit-roasting process. |
